200 grams ikan bilis (anchovies)- split in half or remove entrails.
3 tablespoon ground dried chillies
oil for frying ikan bilis
Pound shallots till fine and add to the ground chillies. Wash ikan bilis and toss to remove excess water.
Heat oil and fry ikan bilis till crisp.Remove and drain oil. Leave about 3 tablespoons of oil in pan and fry chillies. Stir over low heat, add half a teaspoon salt.
Continue to fry the chillies over low heat till it is crisp. Add the fried ikan bilis, mix well and continue frying for about a few minutes, till ingredients are mixed and crispy.
Leave to cool and store in a container. This sambal is eaten as a spread with bread or with pancake (lempeng)
