Ingredients
800 g Flat Rice Noodle
400 g Fresh Prawn
100 g Beansprout
8 nos Whole Egg
100g Chives - sliced
4 tbsp Garlic - chopped
100 ml Cooking Oil
For making Chili Paste:
100 g Chili Paste
2 tbsp Garlic - chopped
100g Prawn shell
1/2 cup Water
For Making Soy Sauce:
1 cup Chicken Stock
1 tbsp Black Soya Sauce
8 tbsp Sweet Soya Sauce or Light Soya Sauce
2 nos Garlic
2 tbsp Oyster Sauce
1 tsp Salt
Directions
For making Chili Paste: Heat up the oil, saute garlic then add prawn shell, chili paste, water and let it simmer till sauce become thick. Then add seasoning.
For Making Soy Sauce: Combine all the ingredients, let it boil then simmer for 10 minutes. Adjust seasoning
Overall method:
Heat up the oil, add 1 tsp garlic and prawn then saute till golden brown.
Add chili paste and flat noodle, stir well.
Add 3 tbsp soy sauce, keep stirring then lasty add bean sprout and chives.
Keep stirring for 1 minute, and remove from the wok.
Ready to serve, garnish with sliced red chili.
