Red Onion
Red onions are the sweetest, but the worst "keepers." They are especially suited for slicing and eating raw: in salads, sandwiches, or on a hamburger. Also known as Spanish onions, these strong, slightly sweet-tasting dry onions vary in colour from red to purplish-red. A source of vitamin C and dietary fibre, red onions also contain small quantities of many other vitamins and minerals.
Cut into thick wedges and stir-fry with lamb, broccolini and hoisin sauce. Finely chop and add to mashed pumpkin. Serve with barbecued chicken.
